Double-shelled eggs are so uncommon that even though there are recordings of individuals breaking them open, many people are confident they are false.
According to Poultry Help, the operation occurs when “an egg that is nearly ready to be laid reverses direction and gets a new layer of albumen covered by a second shell.”
The mechanism that causes the egg to reverse is known as a “counter-peristalsis contraction,” according to Countryside Network.
However, there is a YouTube video showing a man who describes himself as “just an old Texas farmer appreciating nature” and discovers a gigantic egg laid by a normal-sized chicken. More than 3 million people have viewed the video since it was posted in July 2015, as of this writing.
The egg’s shell slowly splits as the farmer starts to tap it. He removes a tiny bit of the chunk, and the yolk is then plainly seen.
“Oh, I see another surprise!” he chuckles.
“A double egger!”
The farmer carefully pours the yolk out of the shell because the inner egg is all that is left. No double yolks, he warns; that is for wimps. “We got two eggs!”
